A hearty and cheesy zucchini casserole that's perfect for a family dinner, combining tender squash, rich cheese, and a crunchy topping.
Ingredients
3 medium zucchini
1 large onion
1 cup crackers
1 cup shredded cheese
2 large eggs
1/2 cup milk
1/2 cup butter
to taste salt
to taste black pepper
Method
Start by gathering all your ingredients. Preheat your oven to 400°F (200°C) and lightly grease a 9x13-inch baking pan.
In a large skillet, combine sliced zucchini and diced onions with a little water. Cover and cook on medium heat until the squash is soft, about 5 minutes. Drain well and move to a mixing bowl.
In another bowl, combine crushed crackers and shredded cheese. Stir half of this mixture into the squash and onion blend, mixing well.
In a small bowl, beat the eggs with the milk, then pour this into the squash mixture along with 1/4 cup of melted butter. Season with salt and pepper to your liking. Transfer this mixture to the prepared baking pan.
Sprinkle the remaining cracker and cheese mixture on top, then dot with 2 tablespoons of butter.
Bake in the preheated oven until the top is golden and crispy, around 25 minutes.
