This delightful quiche combines the rich flavors of sautéed onions and garlic with fresh spinach, mushrooms, and a mix of feta and Cheddar cheeses, all enveloped in a flaky pie crust.
Ingredients
2 tablespoons butter
1 medium onion
2 cloves garlic
4 cups fresh spinach
1 cup mushrooms
1 cup feta cheese
1 cup Cheddar cheese
4 large eggs
1 cup milk
to taste salt
to taste pepper
1 prepared pie crust
Method
Begin by preheating your oven to 375°F (190°C) and assembling all your ingredients.
In a skillet, melt a good amount of butter over medium heat. Once melted, toss in chopped onions and minced garlic, sautéing until they turn a lovely golden brown, which will take about 7 minutes.
Next, stir in fresh spinach, sliced mushrooms, crumbled feta, and half a cup of shredded Cheddar cheese. Season with a pinch of salt and pepper, mixing everything together thoroughly.
Transfer the spinach and cheese mixture into a pre-prepared pie crust, ensuring it is evenly distributed.
In a separate bowl, whisk together eggs and milk until smooth. Season this mixture with a touch of salt and pepper.
Carefully pour the egg mixture over the spinach filling, ensuring it seeps in and combines well.
Place the quiche in the preheated oven and bake for 15 minutes.
After 15 minutes, sprinkle the remaining Cheddar cheese on top and continue baking until the center is set, which should take another 35 to 40 minutes.
Once done, allow the quiche to cool for about 10 minutes before slicing and serving.
