Ingredients
1 can, chopped Artichoke hearts
2 cups, chopped Fresh spinach
1/2 cup Mayonnaise
2.5 cups, shredded Monterey Jack cheese
1/4 cup, grated Parmesan cheese
Method
Preheat your oven to 350°F (175°C) and prepare a 1-quart baking dish by lightly greasing it.
In a large bowl, mix together the chopped artichoke hearts and fresh spinach with mayonnaise. Fold in 2 cups of shredded Monterey Jack cheese and sprinkle in grated Parmesan cheese.
Transfer the mixture to the prepared baking dish, smoothing it out evenly. Top it off with the remaining 1/2 cup of Monterey Jack cheese.
