Ingredients
2 pieces chicken breasts
1 bag tortilla chips
1 can refried beans
1.5 cups shredded cheese
1 bunch green onions
1 cup sour cream
Method
Begin by collecting all necessary ingredients. Preheat your oven to 350°F (175°C) and lightly spray a 9x9-inch baking dish with cooking spray.
Place the chicken breasts on a microwave-safe plate, cover with a paper towel, and microwave on high for approximately 10 minutes, or until fully cooked and no longer pink inside.
Let the chicken cool for a few minutes, then shred it using a knife or fork and set aside.
In a saucepan set over medium heat, warm the refried beans while stirring until they are thoroughly heated.
Start assembling your layers by placing half of the tortilla chips at the bottom of the prepared baking dish. Sprinkle with half a cup of shredded cheese and add some chopped green onions on top.
Spread the warm refried beans over this first layer, followed by another half cup of cheese and some dollops of sour cream.
Next, evenly distribute the shredded chicken across the layers. Finish off by adding the remaining tortilla chips and sprinkle the last half cup of cheese on top.
Bake in the preheated oven for about 15 to 18 minutes, or until the cheese is melted and bubbly.
