1 packet taco seasoning
2 cups milk
2 tablespoons butter
2 tablespoons all-purpose flour
2 cups shredded cheese
1 can black beans
1 cup salsa
1 bag tortilla chips
Method
Spray a skillet with cooking spray and warm it up over medium heat. Add the beef and cook, stirring occasionally, until it's nearly done with a touch of pink remaining, about 5 to 7 minutes. Drain any excess fat, then stir in the taco seasoning and let it cook for 3 to 5 minutes for the flavors to develop.
In a medium saucepan, warm the milk over medium heat until small bubbles form at the edges, then remove from heat.
In another medium saucepan, melt the butter over medium-high heat. Once melted, whisk in the flour continuously until it turns a light golden hue and forms a paste, around 5 minutes. Gradually add the warm milk, whisking until the mixture reaches a simmer, then cook and stir for 10 to 15 minutes until it thickens and smooths out. Reduce the heat and stir in the shredded cheese until it’s melted and creamy.
Mix the cooked beef, black beans, and salsa into the cheese sauce, ensuring everything is well combined. Spoon this delicious mixture over a pile of crispy tortilla chips to serve.
