Ingredients

  • 2 tablespoons powdered peanut butter
  • 1 tablespoon fresh lime juice
  • 1 tablespoon tamari
  • 1 teaspoon grated ginger
  • as needed tablespoons water
  • 2 cups sugar snap peas
  • as needed tablespoons oil
  • to taste none salt
  • for serving none lime wedges
  • for garnish none chopped peanuts

Method

  1. In a mixing bowl, blend powdered peanut butter with freshly squeezed lime juice, tamari, and finely grated ginger. Slowly incorporate water, one tablespoon at a time, until you achieve your preferred consistency for dipping.
  2. Heat a large skillet on high heat and add a splash of oil. Once the oil is shimmering, add the sugar snap peas and a pinch of salt. Sauté for about 5 minutes, stirring occasionally, until the peas become blistered and show some charred marks.
  3. Present the blistered peas on a platter with lime wedges and the zesty peanut dip. For an extra crunch, top the dip with some chopped peanuts before serving.
