A delightful appetizer featuring crisp sugar snap peas, perfectly charred and served with a creamy, zesty peanut dip that adds an exciting flavor contrast.
Ingredients
2 tablespoons powdered peanut butter
1 tablespoon fresh lime juice
1 tablespoon tamari
1 teaspoon grated ginger
as needed tablespoons water
2 cups sugar snap peas
as needed tablespoons oil
to taste none salt
for serving none lime wedges
for garnish none chopped peanuts
Method
In a mixing bowl, blend powdered peanut butter with freshly squeezed lime juice, tamari, and finely grated ginger. Slowly incorporate water, one tablespoon at a time, until you achieve your preferred consistency for dipping.
Heat a large skillet on high heat and add a splash of oil. Once the oil is shimmering, add the sugar snap peas and a pinch of salt. Sauté for about 5 minutes, stirring occasionally, until the peas become blistered and show some charred marks.
Present the blistered peas on a platter with lime wedges and the zesty peanut dip. For an extra crunch, top the dip with some chopped peanuts before serving.
