Caramelized Sweet Potato and Cashew Bake

This delightful casserole features layers of sweet potatoes and a crunchy cashew topping, all finished with golden marshmallows for a sweet touch.


Ingredients

  • 2 pounds Sweet Potatoes
  • 1 cup Brown Sugar
  • 1 teaspoon Ground Cinnamon
  • 1/2 teaspoon Ground Ginger
  • 1/4 teaspoon Nutmeg
  • 1/2 teaspoon Salt
  • 1 cup Cashews
  • 4 tablespoons Butter
  • 2 cups Mini Marshmallows

Method

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9x13 inch baking dish.
  2. Peel and chop the sweet potatoes, then place them in a large pot filled with water. Bring to a boil and cook for about 10 minutes until tender when pierced with a fork. Drain and allow to cool slightly.
  3. In a bowl, mix together brown sugar, cinnamon, ground ginger, nutmeg, and salt. Stir in the chopped cashews until evenly coated.
  4. Arrange half of the sweet potato pieces in the bottom of the prepared baking dish. Sprinkle half of the sugar and cashew mixture over the layer, followed by half of the butter. Repeat the process with the remaining sweet potatoes, sugar mixture, and butter.
  5. Bake in the oven for around 30 minutes, or until the sweet potatoes develop a caramelized layer. Add mini marshmallows on top and return to the oven for an additional 5 minutes, or until the marshmallows turn a lovely golden brown.
