Ingredients
3 cups all-purpose flour
1/2 cup unsalted butter
1/4 cup granulated sugar
1 cup warm milk
1 unit large egg
1 packet active dry yeast
1/2 cup molasses
1/2 cup brown sugar
1 teaspoon ground cinnamon
Method
Start by making the dough: In a spacious bowl, blend together flour, melted butter, sugar, warm milk, egg, and yeast. Mix until the dough thickens, then transfer it to a floured surface and knead for several minutes. Allow the dough to rest and rise for approximately 45 minutes.
While the dough rises, prepare the luscious filling: In a saucepan over moderate heat, combine molasses, brown sugar, butter, and a dash of cinnamon. Stir until everything melds together and becomes warm, then remove from heat and set aside.
Preheat your pizzelle iron according to the manufacturer's instructions and give it a light coat of cooking spray.
Once the dough has risen, gently knead it again, then divide it into twelve equal pieces. Roll each portion into a ball about 2 inches in diameter. Place one ball in the center of the preheated pizzelle iron, close the lid, and cook until the cookie turns a lovely golden brown, which should take between 1 1/2 to 3 minutes.
Carefully take the cookie out of the iron and, while it's still warm, horizontally slice it in half using a serrated knife. Generously spread the prepared filling on one half and press the other half on top to form a delightful sandwich. Repeat with the remaining dough and filling.
