Ingredients

  • 1 cup cornmeal
  • 1 cup granulated sugar
  • 1 cup regular milk
  • 1 cup coconut milk
  • 1 cup all-purpose flour
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1 tablespoon baking powder

Method

  1. Preheat your oven to 340°F (170°C) and prepare a 10-inch round cake pan by greasing it and lightly dusting it with flour.
  2. In a blender, mix together the cornmeal, granulated sugar, regular milk, coconut milk, all-purpose flour, eggs, and vegetable oil until the mixture is smooth and well combined. Add the baking powder and blend for a few more seconds.
  3. Pour the smooth cornmeal mixture into the prepared cake pan and transfer it to the oven. Bake for 30 to 40 minutes, or until a toothpick inserted into the center comes out clean.
