This rich and flavorful Bourbon-Infused Garlic Sauce combines the sweetness of caramelized garlic with the tang of pineapple and the warmth of bourbon, perfect for drizzling over meats or as a dip.
Ingredients
1 piece garlic bulb
2 tablespoons olive oil
1 cup brown sugar
1 cup pineapple juice
1/2 cup water
1/4 cup teriyaki sauce
1/4 cup soy sauce
2 tablespoons lemon juice
1 small onion
1/2 cup bourbon whiskey
1 cup pineapple chunks
1 teaspoon cayenne pepper
Method
Start by preheating your oven to 325°F (165°C).
Prepare a garlic bulb by slicing off the top about half an inch from the top, and trim the base so it can stand upright, then peel off the outer layers while keeping the cloves intact.
Place the garlic bulb in a small baking dish, drizzle with olive oil, and cover with a lid or aluminum foil.
Roast the garlic in the preheated oven for roughly 1 hour, until the cloves soften and emit a fragrant aroma.
In a saucepan, mix together brown sugar, pineapple juice, water, teriyaki sauce, and soy sauce. Bring this blend to a boil, then lower the heat to let it simmer.
After roasting, squeeze the garlic heads to extract the creamy, soft roasted garlic.
Add 2 teaspoons of the roasted garlic to the simmering sauce and whisk until well combined, reserving the rest for future recipes.
Stir in lemon juice, diced onion, bourbon whiskey, pineapple chunks, and a hint of cayenne pepper. Let the sauce simmer until it reaches a thick, syrupy texture, which should take about 40 to 50 minutes.
