Ingredients
2 cups milk
1 cup flour
3 large eggs
2 tablespoons melted butter
2 tablespoons sugar

1 cup cottage cheese
1 cup cream cheese
1/4 cup confectioner's sugar
1 teaspoon vanilla extract
2 cups blueberries
1/2 cup sugar
1.5 tablespoons cornstarch
1.5 tablespoons cold water

Method
In a large bowl, combine milk, flour, eggs, melted butter, sugar, and a pinch of salt. Whisk until smooth and then cover the bowl. Refrigerate the batter for at least 8 hours or overnight to enhance the flavors. If it becomes too thick, simply stir in a splash of water to achieve the right consistency.
In another bowl, mix together cottage cheese, cream cheese, powdered sugar, and vanilla extract until well blended but still slightly chunky.
For the blueberry sauce, combine blueberries, 2 cups of water, and 1/2 cup of sugar in a saucepan. Bring to a boil over medium-high heat, then reduce the heat and let it simmer for about 3 to 5 minutes until the blueberries soften and release their juices. Taste and adjust sweetness if necessary.
In a small bowl, mix cornstarch with 1 1/2 tablespoons of cold water until smooth. Slowly add this mixture to the blueberry sauce off the heat, stirring continuously until the sauce thickens.
Heat a skillet over medium heat and add a small amount of butter. Pour in enough crepe batter to form a round pancake approximately 8 inches in diameter. Cook until the edges turn golden brown, about 2 to 3 minutes, then flip and cook for an additional minute. Remove the crepe from the skillet and allow it to cool slightly.
Place a generous spoonful of the cheese filling in the center of each crepe, then carefully roll it up to encase the filling. Arrange the filled crepes on a serving platter and generously drizzle with the blueberry sauce. Repeat the process with any remaining batter, filling, and sauce.
