Delightful puff pastries filled with tender beef and a hint of horseradish, perfect for a savory snack or appetizer.


Ingredients

  • 3 large eggs
  • 1 cup milk
  • 1 cup all-purpose flour
  • a pinch none salt
  • 1 tablespoon oil
  • 2 teaspoons shredded roast beef
  • 2 teaspoons horseradish

Method

  1. In a mixing bowl, blend eggs, milk, flour, and a pinch of salt until the mixture is smooth and glossy. Let it sit for 20 minutes.
  2. Preheat your oven to 400°F (200°C).
  3. While the batter is resting, add a tablespoon of oil to each compartment of a muffin tin and place it in the hot oven.
  4. After the resting period, give the batter a quick stir. Carefully take out the muffin tin from the oven and fill each section about three-quarters full with the batter, allowing it to sizzle in the hot oil. Add a teaspoon of shredded roast beef and a teaspoon of horseradish to the center of each section.
  5. Place the muffin tin back in the oven and bake for about 12 minutes, or until they rise and turn a lovely golden color. Once done, remove them and let them rest on a plate lined with paper towels. Serve warm with a side of au jus.
